Myth & Ember started as a passion project of a man who is often accused of having “no casual hobbies.” After hundreds of hours of research, hundreds more of hands-on-experience, and countless experiments that challenge the norms of coffee, Myth & Ember began to emerge. Bryce, the founder, spent nearly five years learning the craft as a self-taught roaster. Then, he had his craft honed under the tutelage of a veteran roaster, Marvin Rodak, who refined his sensory roasting skillset into a true trade. Sensory roasting became the heartbeat of the operation, but Bryce’s time spent in study of Mechanical Engineering led him to incorporate modern technologies into old practices. With this merger, Myth & Ember was born—a place where coffee science meets coffee art.

What we do.

  • Fresh roasted coffee is the soul of our operation. We originally opened as an exclusive roastery in 2020, and grew into a coffee shop in 2022. While we are always excited to serve freshly made drinks, we are even more excited when people try our coffee beans for themselves.

  • Our coffee shop & roastery is located at 212 E Marshall, Van Alstyne, TX. We started the shop as an extension of the roasting business. We use top-of-the-line equipment (La Marzocco and Mahlkonig, mostly) to produce espresso the way we intended it. We have a full gamut of coffee drinks, along with house-made syrups, house-made pastries, and various baked goods from local bakeries.

  • To be a roaster, you really need to know the in’s-and-out’s of the coffee and espresso making process. To have a disconnect between the roaster and the final product never yields good results. One of the services we offer is training baristas and helping those wholesaling our coffee be equipped to troubleshoot problems on-site and dial in for the best possible flavor.

  • It turns out, if you take apart espresso machines and put them back together enough, you start to really understand the way they work. As a side hobby, Bryce has been buying old, broken machines, and fixing them. He is currently working towards a more official Espresso Technician Guild certification, but is happy to still offer his coffee technician knowledge in the meantime.

  • For those who are interested in being a “home barista,” yet aren’t sure where to start, we are happy to do coffee classes. The goal of these classes is to be a “workshop” where we can taste, test, and work with real coffee gear. Our goal is to equip you with the knowledge needed to brew the best possible cups of coffee you can at home with our beans.

  • Absolutely! Wholesaling is one of the biggest emphases we have. While we love having our own shop, we want to help other shops, businesses, churches, etc. build their own specialty coffee programs. If you’re interested, please do not hesitate to reach out!

  • Every roaster is akin to a chef preparing a meal. Whether the differences are large or small, each chef has a slightly different idea of what flavors are to be desired in the end, and the best way of achieving those flavors. We source high-end, ethical coffees that do well in the light to medium roast categories. More than that, we are a huge fan of balanced cups of coffee, and do not find overly acidic or overly sweet cups desirable. Our chief goal when roasting is to showcase a coffee’s origin flavors while not overwhelming the palette with wild or overly intense flavors. We don’t want a cup that is nice to try only once, but one that is nuanced in its flavors and something you want to reach for again and again.

  • We love offering guiding principles and expertise on how to best brew our coffees. Our roasts have an “end goal” in mind, which includes how we see them best being brewed. We try to give ample detail on our coffees as seen at mythandember.com, but also know that you may have more questions. We will always do our best to accommodate! If you are a business in need of more serious training/consulting, we also offer those services.

  • We work exclusively with suppliers who are committed to honest wages and ethically sourced beans. We would rather pay more for our beans and ensure a high quality of living for our farmers than cut corners on costs. Unfortunately, organic certifications can be expensive, so not all of our coffees are organic certified even if organic in practice. More than that, many of our farmers are significantly more natural than the USDA organic certifications would require. And so, we do our best to buy organic and ethical coffees where and when we can.
