Meet the Founder

Bryce Himmelreich
Founder & Head Roaster

Myth & Ember was been a passion project of mine that started many years ago, but blossomed into something bigger than I ever imagined. When I started roasting coffee, I never dreamed that it would take me here—what a wild journey it has been! I would love to see you fall in love with coffee the same way I have, and succeed in making your own coffee dream a reality. I love the taste of coffee, but love even more the ethos it creates. I have had some of the most life-giving conversations over great cups of coffee, and I hope to share that sentiment with everyone here.

How it started.

Years ago, I made my first ever cup of coffee, and it was genuinely terrible. I brewed for myself the most bitter cup of coffee I’ve ever had on the cheapest equipment money could buy and beans that had sat in the back of my parents’ freezer for who-knows-how-long. While that cup was truly atrocious (as were many of the following cups), I decided that if I was going to drink coffee, I might as well learn how to make it correctly. And, if I was going to make it, I might as well make it the best cup ever.

Soon, my curiosity led to research—hundreds of hours of it. I spent the better part of three years engaging with fellow coffee lovers on forums and reading papers and doing myriad experiments in pursuit of the perfect cup. My greatest hurdle became getting good coffee beans to my door. I found countless roasters selling overpriced, trendy coffee, and none of them tasted too great. So, I decided to try my hand at roasting in a simple air-popper. The results were mixed at best, until I had my “wow” moment.

On my trusty air popper with an Ethopia Yirgacheffe bean, I made a few cups of coffee I can only describe as “fresh squeezed strawberries with a hint of chocolate.” It was truly the greatest cup of coffee I ever had to that moment, and ignited an insatiable urge to find more coffees like it.

I slowly graduated from my air-popper, to a home-made Behmor, to a 500 gram sample roaster, and to the Diedrich IR-3 I’m using today. Along the way, I shared my coffee with a lot of people, and before long I had a lot of requests from people asking to buy some coffee. It seemed like everyone enjoyed the journey I was on in pursuit of the greatest cups of coffee, and were happy to join me in that. We are still on that journey, and if I have anything to say about it, we always will be.
